These tasty little primal nuggets are so delicious and comforting, you’ll be in danger of overindulging! Zucchini & Egg Breakfast Muffins

October 2, 2014 By The Ultimate Nutrition Team Leave a Comment

I LOVE having eggs for breakfast. Scrambled eggs and omelets are morning staples in my diet. But the downside to yummy eggs is that they aren’t always easy to take with you when you’re on the go. Finger food is much more manageable when you’re rushing out the door or commuting. Breakfast muffins are a delicious way to eat your eggs and veggies. They’re also portable, which is great for the busy paleosos who eat breakfast on the go. That said, they are just as delicious if you choose to sit at a table and eat them at home. I’ve been known to prep the egg mixture in the evening and to pop the muffin tray in the oven when I wake up, ...

Mexican Chocolate Mousse

October 1, 2014 By Joel Runyon Leave a Comment

Silky and rich, this chocolate mousse takes only minutes to make and no cooking is required. However, to achieve the right texture, it should be refrigerated for at least one hour before serving, so make sure to add in that time. A hint of cinnamon and heat adds a Mexican twist to this creamy, nutritious dessert.  Mexican Chocolate Mousse 2 Ripe avocados1 cup Coconut milk1/2 cup Unsweetened cocoa powder1/2 cup Honey2 tsp Vanilla extract2 tsp Cinnamon1/2 tsp Ground ancho chile Combine all of the ingredients together in a blender or food processor and process until smooth.Adjust honey to taste.Refrigerate for ...

Grilled Peaches With Cardamom Cream

September 29, 2014 By Joel Runyon Leave a Comment

Grilled peaches are an easy summer dessert, which bring a lot of color and fresh flavor to the table. The coconut cream comes from refrigerating a can of full fat coconut milk. Once cold, the coconut cream will separate and move to the top of the can. Simply scoop the cream from the top and add to the grilled peaches. Honey and cardamom round out the flavors in this delicious dessert.  Grilled Peaches With Cardamom Cream 2 Ripe peaches ((halved and pitted))1/2 cup Coconut cream1/4 cup Slivered almonds2 tbsp Honey1/4 tsp Ground cardamom Stir the honey and ground cardamom together in a small bowl. Easy Baked Apple Chips

September 28, 2014 By Joel Runyon Leave a Comment

This is a simple but very satisfying recipe. All you have to do is bake some thinly sliced apples to turn them into crispy, sweet chips. The baking time can vary, depending on the thickness of the apple slices and your oven. Mandolins are great for thinly and evenly slicing the apples. You can sprinkle the chips with your favorite spices, such as nutmeg, cinnamon, or even ginger. Store in an airtight container if there are any left over. Easy Baked Apple Chips 2 Gala applesDash of nutmeg ((optional)) Preheat the oven to 225 degrees F.Prepare two baking sheets with parchment paper.Slice the apples very thinly and ...

Chocolate Protein Pancakes

September 22, 2014 By The Ultimate Nutrition Team Leave a Comment

I love a good protein pancake for breakfast (or lunch or dinner or snack time). It’s a quick and easy breakfast that is nutritious and delicious and that helps satisfy a sweet tooth. The nice thing about these pancakes is they wont put you in a sugar-induced coma nor will they add pounds to the scale. Well, they might add pounds your bench press. Take advantage of my Cellucor discount for the whey protein. My discount code is PALEOSO. This will get you 20% off your order plus free shipping when you order from www.cellucor.com. I used Cellucor Cor-Whey in Molten Chocolate for this recipe. Chocolate Protein ...

Salt And Vinegar Kale Chips

September 22, 2014 By Joel Runyon Leave a Comment

Kale chips are one of the easiest, tastiest and least expensive paleo snacks to make at home. This salt and vinegar version will have you begging for more! When baked in the oven like in this recipe, kale becomes crispy and salty, making it the perfect snack for satisfying your craving for potato chips or French fries. The kale should be completely dried off when you bake it, not freshly rinsed, otherwise the chips can turn out chewy and rubbery. The incredible amounts of healthy vitamins and nutrients that kale contains are another good reason to try out this easy snack.  Salt And Vinegar Kale Chips 1 bunch ...
