They are easy to take to parties and picnics and are enjoyed by people not following the paleo diet as well. No refined sugar or flour is necessary to make these delicious, fudge-like brownies.
Paleo Mint Brownies

- 1 cup Almond butter
- 1/3 cup Honey
- 1 Egg
- 2 tbsp Coconut oil (melted)
- 1 tsp Peppermint extract
- 1/4 cup Unsweetened cocoa powder
- 1/2 tsp Baking soda
- Pinch of salt
- Coconut oil spray
Instructions

Preheat the oven to 325 degrees F.

Place the almond butter, honey, egg, coconut oil, and peppermint extract into a large bowl.

Use a hand blender to combine until smooth.

Mix in the cocoa powder, baking soda, and salt.

Prepare an 8x8-inch baking pan with coconut oil spray.

Spoon the batter into the pan and bake for 18-20 minutes, until a toothpick inserted into the center comes out clean.
