I love a good protein pancake for breakfast (or lunch or dinner or snack time). It’s a quick and easy breakfast that is nutritious and delicious and that helps satisfy a sweet tooth. The nice thing about these pancakes is they wont put you in a sugar-induced coma nor will they add pounds to the scale. Well, they might add pounds your bench press.

Chocolate Protein Pancakes
Calories 58 kcal
Ingredients
- 1 scoop protein - Cellucor Molten Chocolate (paleoso)
- 1 tbsp Coconut flour
- 2 tbsp PB2 (paleoso)
- 3 Egg whites
- 2 tbsp Coconut milk
- 3 oz Frozen strawberries
Instructions
-
Heat skillet to medium-high (7 out of 10) and use preferred nonstick cooking spray. I found that cooking spray is best for browning the pancake, as coconut oil tends to fry it.
-
Blend the pancake ingredients (not the strawberries) and then make them up as you would normal pancakes. It usually takes about 2 minutes for the first side to cook and 1 – 1 ½ minutes for the other side. Use your judgment. (Pancakes can be a tricky beast to master but these will cook faster since they are egg-based. I swear “flour” pancake recipes always start with one failed pancake.)
-
Microwave frozen strawberries for 45 seconds, stir, and mash a little, then microwave again for another 45 seconds.
-
Drizzle warm strawberries over pancakes and ENJOY!
