Perfectly Roasted Vegetables
We are closely inching towards fall. I can't wait to pull out my sweaters and boots and scarves. Light my favorite fall-scented candles. Start baking and roasting all the foods. And I can tell you right now, these perfectly roasted vegetables are going to be on a main rotation.
I've said it time and time again. If you think you don't like vegetables, but you haven't tried them roasted, think again. Roasting vegetables gives them a sweet, tasty, soft twist that you can't resist.
This recipe calls for a combination of bell pepper, mushrooms, zucchini, and broccoli. I honestly think this a yummy collection of veggies, especially for ...

Steak, Eggs, and Greens
If there was such a thing as a "Gains Bowl", this breakfast may just be that meal. You've got protein-packed steak and eggs and nutrient-dense greens that make this a complete and filling meal.
I'm a savory breakfast type of person. While I love a good waffle or pancake every now and then, I most often opt for something hearty. And on a special occasion, this type of breakfast is my go-to.
Let's be honest, a good cut of beef isn't exactly cheap. And now more than ever, I make an effort to buy the highest quality meat that I can afford. I want to support farms that are pursuing agriculture in the right way - using sustainable methods ...

Pineapple Strawberry Coconut Smoothie
This may look like a thick and creamy strawberry milkshake that you get from your local ice cream shop, but it's loaded with fruits and healthy fats that make for a yummy mid-day snack or after dinner dessert. There's no ice cream in this pineapple strawberry coconut smoothie, but I promise that you won't miss it once you taste how delicious this is.
If you're missing out on your tropical vacation this year thanks to COVID-19, whip up this pink dream and sip it in the sun. It's not as great as being on the beach, but it's better than nothing!
The sweetness in this smoothie most definitely comes from pineapple. Other than the fruit, ...

Spice up your breakfast with this fried eggs with curried cauliflower rice recipe. Chances are you haven't thought about incorporating curry and cauliflower into your mornings - but let me tell you...you might just be missing out on something great!
I don't know about you, but anytime I can eat a vegetable first thing in the morning, I feel very accomplished. Is that just me? Am I weird? (Probably, but I've come to terms with it :) )
Now, this fried eggs with curried cauliflower rice recipe was originally created for breakfast, but quite honestly, you could eat this at any time of the day. I have never, ever been into putting labels ...

I'm guilty of getting stuck in a smoothie rut - using the same ingredients over and over. And quite honestly, there's nothing wrong with that. BUT, sometimes, it's good to get a little variety into your routine.
This is exactly how this blueberry lime smoothie came to be. I just needed to mix it up. And I resorted to ingredients I readily had available in my fridge and pantry.

Curried Mango Shrimp Kebobs
I know many summer barbecues probably aren't happening this year (and rightly so), but these curried mango shrimp kebobs are great even if you're having a party for one!
I love shrimp in the summer because it's so light. I'm all about light, fresh, and flavorful and this recipe hits all of those notes. With sweet mango and satisfying coconut oil, you really can't go wrong.
I used shell-on shrimp that required peeling but you don't have to use this type. You can go for whatever you find to be easiest. As far as the mango goes, you want to aim for big diced pieces. I prefer fresh-cut mango. Need a refreshed on how to cut up mango - ...

Easily-Customizable Banana Chia Smoothie
This banana chia smoothie couldn't be simpler. And it's dairy-free and sweetener-free which means that it's friendly no matter which dietary preference you may have.
I know banana bread was all the rage when we all first started to go stir-crazy in quarantine. But hear me out when I say that's not the ONLY way you can use up those bananas that are sitting on your counter.
If you have a big bunch and you don't think you'll be able to eat them before they go bad, I like to slice them up and throw them in a freezer-safe bag. Keep that bag in the fridge and add in your bananas when necessary. That way, you always have a stock of frozen ...

Bacon Mushroom Thyme Burgers
This isn't your Mama's normal old burger. This Bacon Mushroom Thyme burger might look unassuming, but I promise you - the flavor is out of this world.
Sure, you've probably put bacon on top of your burger before. But have you put bacon IN your burger? Add in some chopped mushrooms and thyme leaves and you've got yourself a burger that just won't quit.
I'd recommend using fresh thyme as fresh herbs *always* taste better, in my opinion. But if you've only got dried, you can definitely sub that in. Also, if you've got another fresh herb that you'd rather try, go for it and let me know how it turns out.
The key to making sure these ...
