Spice up your breakfast with this fried eggs with curried cauliflower rice recipe. Chances are you haven’t thought about incorporating curry and cauliflower into your mornings – but let me tell you…you might just be missing out on something great!
I don’t know about you, but anytime I can eat a vegetable first thing in the morning, I feel very accomplished. Is that just me? Am I weird? (Probably, but I’ve come to terms with it 🙂 )
Now, this fried eggs with curried cauliflower rice recipe was originally created for breakfast, but quite honestly, you could eat this at any time of the day. I have never, ever been into putting labels on different meals. As much as I love pancakes for breakfast, I also love them for dinner. And I’ve been known to eat leftover dinner for breakfast the next morning.
Moral of the story – eat what you want, when you want. That’s it!
There are no crazy ingredients in this recipe. In fact, you probably have mostly everything you need already in your fridge or pantry. I know, for paleo people, coconut oil, eggs, and fresh herbs are pretty much standard.
This recipe also calls for cauliflower rice, You can definitely rice your own cauliflower with a food processor if you like that method. But now, in the modern time of 2020, you can get it pre-riced and it makes your life so. much. easier. I usually get mine from Trader Joe’s but you can find it at most all grocery stores.
We wrote this recipe with eggs in mind but you can use this in whatever way you prefer! If you’re short on protein for the day, try topping the cauli rice with some grilled chicken. It’s a great, nutrient-dense meal that will leave you feeling full and satisfied. Finish with an extra squeeze of lime and cilantro if you’re a major fan like me.

Fried Eggs with Curried Cauliflower Rice
Ingredients
- 1 tablespoon coconut oil
- 4 cups riced cauliflower
- 2 teaspoons curry powder
- 2 tablespoons chopped cilantro
- Juice of 1 lime
- 4 eggs
- Sea salt and fresh ground pepper to taste
Instructions

Heat the oil in a large, deep skillet. Add the cauliflower and curry powder and stir until softened. Add the cilantro and lime juice and remove from pan.

Add the eggs to the pan and cook to your liking. Season with salt and pepper and serve with the cauliflower.
