This may look like a thick and creamy strawberry milkshake that you get from your local ice cream shop, but it’s loaded with fruits and healthy fats that make for a yummy mid-day snack or after dinner dessert. There’s no ice cream in this pineapple strawberry coconut smoothie, but I promise that you won’t miss it once you taste how delicious this is.
If you’re missing out on your tropical vacation this year thanks to COVID-19, whip up this pink dream and sip it in the sun. It’s not as great as being on the beach, but it’s better than nothing!
The sweetness in this smoothie most definitely comes from pineapple. Other than the fruit, there is no other sweetener involved. The only other two ingredients are chia seeds and coconut milk. These are two ingredients that are full of healthy fats that are going to keep you feeling full as well as help balance out your blood sugar from the fruit.
And that’s it – it’s incredibly simple. And the resulting smoothie is so pretty, if I do say so myself.
Anytime we have a recipe with coconut milk, we always get asked what kind of coconut milk is best. I always recommend using the full-fat coconut milk that comes in a can. This lends itself to a rich, creamy flavor and texture. I’ve found that the coconut milk in a carton is more “liquid-y” and doesn’t give such a rich flavor.
If you want to make this smoothie thick like a milkshake, I’d recommend using frozen fruit. That’s going to make it really thick and creamy. If you don’t have frozen fruit on hand, you could also add fresh and then add ice cubes.
This recipe yields about 12 ounces. If you’re sharing with a friend, I’d recommend doubling the ingredients.
Let me tell you, this pineapple strawberry coconut smoothie makes a great snack in between meals or a post-workout shake. Throw some vanilla protein powder in there if you’re really trying to get crazy 🙂

- 1 cup frozen strawberries
- 1 cup diced pineapple
- 1 tablespoon chia seeds
- 1/2 cup coconut milk
