This blueberry lime smoothie is a sweet and creamy concoction loaded with antioxidants from the berries and tanginess from the citrus. If you’re looking for a light breakfast or a post-workout smoothie, this is a great option.
I’m guilty of getting stuck in a smoothie rut – using the same ingredients over and over. And quite honestly, there’s nothing wrong with that. BUT, sometimes, it’s good to get a little variety into your routine.
This is exactly how this blueberry lime smoothie came to be. I just needed to mix it up. And I resorted to ingredients I readily had available in my fridge and pantry.
Summer is the best time for berries. Here in the Pacific Northwest, the berry farms are abundant and it’s practically tradition to go pick our own at a U-PICK farm. And then, of course, you eat so many that you feel you may burst. And then you freeze the rest for later.
This smoothie features my favorite summer berry – that little blue one. You’ll also need a lime, coconut milk, and a banana. I highly recommend using frozen fruit to give this smoothie more volume. If your fruit isn’t frozen, the easiest thing to do is add ice!
A little side note – smoothie meal prep bags are SO easy to make for busy mornings or a quick afternoon snack. All you have to do is put the portioned fruit into little baggies and stick them in the freezer. When you’re ready to make your smoothie, just throw the frozen fruit and liquid into the blender and you’re good to go.
If you want to boost this smoothie into a post-workout shake, just add in your favorite protein powder. I’d recommend a complimentary flavor – like vanilla or unflavored (we like the Bone Broth Protein from Paleovalley). But you can definitely experiment and see what you like!
