If there was such a thing as a “Gains Bowl”, this breakfast may just be that meal. You’ve got protein-packed steak and eggs and nutrient-dense greens that make this a complete and filling meal.
I’m a savory breakfast type of person. While I love a good waffle or pancake every now and then, I most often opt for something hearty. And on a special occasion, this type of breakfast is my go-to.
Let’s be honest, a good cut of beef isn’t exactly cheap. And now more than ever, I make an effort to buy the highest quality meat that I can afford. I want to support farms that are pursuing agriculture in the right way – using sustainable methods and treating their animals the way they should be treated. You’ll want to use a heavy skillet to cook your beef. Make sure your tenderloin is cut into cubes to make them perfectly bitesize.
Once your beef is cooked to your liking (for me, medium-rare to medium), you can remove the beef and throw in your garlic and greens. You’re looking for your greens to get nicely wilted. I even like mine a little crispy on the edges.
When wilted, sprinkle your desired amount of red pepper flakes and make two wells within the greens for your eggs. Crack them into the wells and let them cook to your liking.
You can put your beef back into the skillet if you prefer, to let it warm, or plate everything straight from there. And that’s it, you have a delicious, hearty breakfast that will leave you feeling energized to get through your day.

Ingredients
- 1 tablespoon olive oil
- 10 ounces beef tenderloin cubed
- 1 clove garlic minced
- 1 bunch hearty greens such as kale or collards chopped
- 1/2 teaspoon crushed red pepper flakes
- 2 eggs
- Sea salt and fresh ground pepper to taste
Instructions

Heat the oil in a heavy nonstick skillet. Add the beef and cook until done to your liking. Remove from pan and add the garlic and greens.

Cook until wilted and add the pepper flakes. Make two wells in the greens and crack the eggs in the pan. Cook to your liking.

Serve with the steak.
