Eggplant & Eggs

March 31, 2014 By The Ultimate Nutrition Team Leave a Comment

Might I say this dish is eggsellent? I don’t know why I bought an eggplant. It was probably because it was on sale and I couldn’t resist. I’d never bought, let alone cooked, an eggplant before I made this recipe. In fact, I can count the number of times I’ve eaten it... on two fingers. I am always looking to try new vegetables, so I figured I would give the eggplant a try. This was a simple and tasty ingredient to cook with. It's also quite healthy. 1 cup of eggplant is only 33 calories. It is not only full of vitamins and minerals but antioxidants too! 1 cup eggplant: Calories: 33 Carbohydrates: 8g Protein: 1g Eggplant & ...

Crock-Pot Turkey Meatballs

March 16, 2014 By Vic Magary 1 Comment

Turkey meatballs you say? Ok, you got me! Anything that has the word meatball in it, sounds like a winner to me. Possibly because meatballs are one of my all time favorite foods. Crock-Pot Turkey Meatballs My friends and I used to walk to a meatball and sausage sandwich shop when we were kids. That shop is still open and I admit to indulging in the deliciousness it has on offer (bread and all!) about once a year. Even with my yearly indulgence, don't worry, there will be no bread in my paleo cookbook! This recipe takes the standard ground beef and/or sausage meatballs and replaces it with turkey, a slightly leaner meat. It's a fun ...

March 9, 2014 By Vic Magary 3 Comments

The sea taste sometimes haunts us we find ourselved unguarded - well here’s the Paleo Shrimp Stir Fry for you! A very tasty,  versatile cuisine that will sure satisfy the belly. It’s super easy to make and is very healthy! This is a guest contribution from Vic Magary, the author of Easy Caveman Cookbook 2. Let's face it... cooking can be a pain!
