I've been craving all the summer recipes lately. As we move into the summer season, I want dishes that are fresh and light and herby. With citrus, parsley, and basil, this lemon herb chicken most definitely hits the spot.
Chicken is incredibly versatile. But a way to make it even better is to marinate it. Let those babies soak for a few hours (I'd recommend at least 2), and then toss them on the grill. You will not be disappointed.
This marinade is made up of olive oil, parsley, green onions, basil, garlic, and lemon for some tang. Blend all of that together in a blender or food processor and then let the chicken soak in that ...

Healthy Root Vegetable Chips
Are you ready to level up your snacking game? These healthy root vegetable chips are your ticket to nutritious snacking. And what's more - this recipe is so easily customizable so you can have these chips tasting like whatever you're craving!
I know that when I'm in the house for long periods of time, I can become complacent in my snacking. I start to reach for whatever is easiest - whether it's a piece of fruit or a bag of salty chips, or crunchy crackers.
But since I've had so much more time at home recently, I've experimented with making my own snacks. Hence why these root veggie chips are on the blog today.
These really aren't ...

Ginger Turmeric Chicken Soup
We're coming at you today with some good old chicken soup - but this time we've added powerful spices to give it a healing punch. This Ginger Turmeric Chicken Soup will deliver on all fronts. Because let's be honest, we're living in trying times right now.
Coronavirus has been announced as a pandemic and people are admittedly worried. Unfortunately, this virus is wreaking havoc across the globe and it is currently unknown what the eventual toll will be.
I don't mean to start this post off on a downer note, but I do think it's important to address because it's weighing on heavy on many people's minds. Mine included. This is a serious ...

Roasted Broccoli and Brussels Sprouts
We're about three weeks into 2020. How's your resolution holding up so far? Hopefully you're still going strong and instilling good habits (whatever those may be for you...) for the coming years.
The gym that I coach at is currently doing the #800gChallenge. Basically, this challenge is all about eating your fruits and veggies. For 30 days, your goal is to eat 800 grams of fruits and vegetables a day.
These can be anything you want. They can be raw carrots, cooked apples, frozen berries, spinach leaves, etc. As long as they are a real fruit or vegetable, they count towards your 800 grams.
We've been doing it for a week now, and ...

Lemon Caper Chicken and Garlic Spinach
Low on effort, but high on flavor. This is how I'd describe this recipe for lemon caper chicken and garlic spinach.
Anytime I can get a bunch of green vegetables in my mouth easily, I'm all for it. Spinach is great for this because - even though this recipe calls for 6 cups of those baby green leaves - it will wilt down so small that it won't be hard to eat.
Add in the fact that there is no lack of garlic and garlic makes everything better. That's the truth.
What's so great about spinach? Well, first of all, it's loaded down with vitamin C. Vitamin C is great for the immune system. It's also got vitamin K, folate, fiber, and ...

Olive Tapenade
This olive tapenade is perfect for anyone who loves olives. It's insanely simple but packed full of flavor thanks to salty olives, fresh garlic, capers, parsley, and lemon juice. And it's paleo AND keto-friendly!
Sounds pretty great, right?
Tapenade originally comes from southeastern France where it was traditionally eaten on top of bread or poultry.
Nowadays, you might find tapenade at your local French restaurant or maybe at a friend's house party. And as fancy as it seems, it really couldn't be easier.
All you need to do is throw the ingredients into a food processor and pulse a few times until you reach your desired ...

Lemon Cucumber Mint Spritzer
Let's be honest - we could all use a little more H2O in our lives.
I am a total fan of plain water. As a kid, my parents really didn't keep have soda in the house. Our staples were milk (my dad had deep roots in dairy farming, so we always had gallons of milk in the fridge) and water.
Because of this, I've never had trouble getting in enough water. I've never found it boring. I never had to struggle giving up sugary drinks. Thanks, Mom and Dad.
But I realize that this probably isn't the norm. When first making the transition to paleo, many people have told me just how hard it is to give up those sugar-filled beverages.
Therefore, we have ...

Detox Green Smoothie
Have you ever eaten or drank something that tasted just like the color it was?
Does anyone else know what I'm talking about? Or am I just crazy?
This smoothie is a prime example - it tastes GREEN. Like if green had a taste, it would be this.
I personally love smoothies because they are the easiest way to get a bunch of vitamins and minerals into your body in one 8oz glass. But the thing you have to watch out for when it comes to smoothies is the sugar content.
Even smoothies that are made of fruit can have a really high sugar content. It tastes delicious - obviously - but it can spike your blood sugar just like your favorite candy ...

Tuna Cucumber Bites
When it comes to parties, appetizers can start the shin-dig off in the right way. But here's the thing - I don't like to spend a whole lot of time on them. I'd rather spend that time deep cleaning, decorating, or putting some time into desserts (come on, you know that's my fav...)
So, I'm always on the hunt for super easy appetizers that I know my friends will love. I think these tuna cucumber bites hit both of those points pretty easily.
Protein-packed tuna and crunchy seedless cucumber makes a great combination. When you combine the tuna with onion, garlic, dill, and lemon, it really pops on the tastebuds.
When it comes to picking out a ...
