I’ve been craving all the summer recipes lately. As we move into the summer season, I want dishes that are fresh and light and herby. With citrus, parsley, and basil, this lemon herb chicken most definitely hits the spot.
Chicken is incredibly versatile. But a way to make it even better is to marinate it. Let those babies soak for a few hours (I’d recommend at least 2), and then toss them on the grill. You will not be disappointed.
This marinade is made up of olive oil, parsley, green onions, basil, garlic, and lemon for some tang. Blend all of that together in a blender or food processor and then let the chicken soak in that glorious mixture for at least 2-4 hours. You could even prep this the night before and let it do its thing overnight.

It’s always helpful to have a meat thermometer to make sure. We want to get the internal temperature to at least 165 degrees Fahrenheit.
Take this meal to the next level and eat it outside on a beautiful evening. Serve it alongside your favorite vegetables and a baked sweet potato. Or maybe on top of some white rice if you’re eating carbs. White rice is my favorite kind of carb.
Want to feel really fancy? Drink some infused water along with it. May I recommend the cucumber lemon water or cherry cucumber water? Or if you’re in the mood for something bubbly, try this blueberry soda.

Lemon Herb Grilled Chicken
Ingredients
- 1/4 cup olive oil
- 1 bunch parsley
- 5 green onions
- 4 basil leaves
- 2 cloves garlic
- 1 teaspoon salt
- Juice and zest of 1 lemon
- 4 chicken breasts
Instructions

Put everything but the chicken in a blender and blend until smooth. Marinate the chicken for 2-4 hours.

When ready to grill, preheat gas or charcoal grill to medium high heat. Grill chicken until internal temperature reaches 165 degrees.

Let chicken rest for 5 minutes before serving.
