Got home late from work and now you’re faced with a barebones fridge and a growling stomach? Whip up this casserole in minutes with ingredients that can be found in your fridge! Hamburger Veggie Casserole 1 lb Ground beef1 Red pepper ((chopped))1 c Purple cabbage ((sliced))1/2 c Fresh oregano ((chopped))1/2 c Onions ((diced))3 tbsp garlic ((minced))1 tbsp olive oilSea salt and fresh cracked pepper ((to taste)) Preheat oven to 350.In a medium saucepan, brown hamburger and strain off fat. For only a small amount of work, these peppers pack a huge amount of flavor. And they’re fun! They are also delicious the day after, when they’re cold right out of the fridge. For an interesting twist on leftovers, consider cracking an egg into the pepper with the chicken and re-heating it at 350 degrees until the egg is done. Enjoy!
