Got home late from work and now you’re faced with a barebones fridge and a growling stomach? Whip up this casserole in minutes with ingredients that can be found in your fridge!
Hamburger Veggie Casserole
- 1 lb Ground beef
- 1 Red pepper (chopped)
- 1 c Purple cabbage (sliced)
- 1/2 c Fresh oregano (chopped)
- 1/2 c Onions (diced)
- 3 tbsp garlic (minced)
- 1 tbsp olive oil
- Sea salt and fresh cracked pepper (to taste)
Preheat oven to 350.
In a medium saucepan, brown hamburger and strain off fat. Set aside.
While hamburger is browning, chop pepper, cabbage, onions, garlic, and oregano. Set aside in a bowl.
Drizzle olive oil in a 9 x13 baking dish (or a tin foil-lined pie plate).
In the baking dish, layer the veggies and hamburger until no ingredients remain.
Place in the oven at 350 degrees for 20 minutes or until all veggies are warmed through but still a little crunchy.
There are tons of ways you could garnish this dish, depending on what kind of mood you’re in. For a stir-fry twist, try some Red Boat Fish Sauce and Paleo Sriracha! Or go Italian with some dried Italian herbs.
