Roasted Baby Sweet Potatoes

November 5, 2017 By Joel Runyon Leave a Comment

sweet potatoes on plate

Roasted baby sweet potatoes have concentrated sweet potato flavor, so you don’t need much else to make them tasty. Roast until caramelized, and make sure you eat the skin; that’s where most of the nutrients are. This recipe is great because it allows for maximum personalization. If you prefer spicy potatoes, feel free to kick the flavor up with cumin or chili powder. If you like it a bit sweeter, honey and cinnamon make a delicious combination. Or, just keep it simple, with a squeeze of lemon juice and a sprinkle of sea salt when the potatoes are done. If you've got a Trader Joe's in the area, we also love their seasonings and spices. ...

They are a great choice for those nights when the weather cools down and you want something hot and toasty, but aren’t quite ready for soup or stew. The combination of pumpkin and maple syrup really gives these meatballs a distinctly autumn flavor. The pureed pumpkin also ensures that these meatballs stay moist and tender. Eat them by themselves, paired with some veggies, or on top of some cauliflower rice. However you do it, I promise that you’ll love every ...

Roasted Fall Vegetables Turkey Salad

October 1, 2017 By Joel Runyon Leave a Comment

A few weeks ago, we posted a recipe for simple roasted fall vegetables. This recipe is taking that idea up a notch. You'll want to save this recipe for the day after Thanksgiving for an amazing way to use all of that leftover turkey.  How easy is this recipe? Super. You'll roast the vegetables in the same way as our previous recipe- toss your favorites (we suggest the ones below, but feel free to include your own) in olive oil and roast them in the oven until they become caramelized and delicious.  Don't stop there though. You'll whip up an easy dressing with superfoods including apple cider vinegar, olive oil, ...

Cranberry Pumpkin Chocolate Muffins

September 24, 2017 By Joel Runyon Leave a Comment

Pumpkin is, by far, the most popular fall food. It’s like as soon as the first day of fall rolls around, everything becomes pumpkin-flavored. And, as a pumpkin lover, I am all about it. But the all-encompassing love for pumpkin doesn’t mean we should forget about all of the other delicious fall and winter fruits out there. This is why I love this recipe so much. It not only features that popular orange fruit, but it pairs it alongside another one of my favorite fall finds – cranberries. A popular winter berry, cranberries carry a powerful nutrient punch. The deep red color can be attributed to the high content of anthocyanins found in ...

Coconut Ice Cream Parfait

September 17, 2017 By Joel Runyon Leave a Comment

coconut-ice-cream

This coconut ice cream parfait recipe takes a bit of time, but I promise it’s worth it. Coconut cream is rich and decadent, with the benefit of being dairy free. Because of this, it makes amazing ice cream, which when paired with fruit, is a healthy and delicious dessert you don’t have to feel guilty about. Let’s talk about the amazing benefits of coconut for a minute. This recipe features both coconut milk and coconut oil for a double dose of coconut goodness. Coconut is rich in medium chain triglycerides. This is a type of fat that is readily absorbed and used as energy by the body. In fact, 60% of the fatty acids contained in ...

Roasted Fall Vegetables

September 10, 2017 By Joel Runyon Leave a Comment

gluten-free

After a summer of raw vegetable salads, you need a little heat in your life. Roasting vegetables gives them new life, and when combined with crunchy pecans and tart cranberries, the results are life changing. Fall vegetables are especially delicious. When roasted in the oven, they get crunchy, sweet, and their contrasting flavors perfectly complement each other. Topping these nutrient-powerhouses off with a couple tablespoons of thyme really takes the recipe up a notch. Thyme has long been a staple in traditional medicine practices. The powerful herb has been shown to be supportive of immune and respiratory systems. It’s especially ...
