Try carrots at your Thanksgiving table this year and you’ll be glad you did. Sweet and caramelized, these baby carrots will be the talk of your holiday table.
Carrots are rich in Vitamin A. Vitamin A is an antioxidant that is highly beneficial for our eyesight. It plays a role in brain function as well as the health of our skin and our immune system.
If you can tolerate dairy, these carrots are delicious topped with some high-quality feta or goat cheese. If not, don’t worry! The cheese can easily be omitted and still taste fantastic.
Roasted Thanksgiving Carrots
Ingredients
- 2 pounds baby rainbow carrots tops removed
- 2 tablespoons olive oil
- Sea salt and fresh ground pepper to taste
- Crumbled feta or goat cheese to serve, optional
Instructions

Preheat oven to 375 degrees F.

Toss the carrots with the olive oil and lay on a baking sheet. Roast for 20-30 minutes until browned and tender. Remove from oven and serve topped with cheese if desired.
