
If you love easy, tasty salads, this is the recipe for you. To me, this sesame cucumber salad screams springtime.
Hopefully, wherever you are in the world, you’re getting a little bit of sunshine and warmth with the changing seasons. Some days, the sun on my face, or sunbeams streaming through my window, is one of the best parts of my day.
Honestly, when 2020 rolled around, I don’t think any of us thought this is where we’d be in the middle of April. For most, we’ve been quarantined in our houses for weeks.
I have fluctuated on a whole scale of emotions over the past month. Fear of the unknown, grief for the state of the world, gratefulness for my health – these emotions come and go. Some days are better than others.
What has really helped me center and ground is finding a bit of normalcy within this chaos. For me, that comes in developing a routine. And one of the things I love including in that routine is cooking.
I try to keep all the recipes I’m cooking right now simple and nutritious. Since we can’t make endless runs to the grocery store, I’ve really come to rely on pantry staples. It’s been fun digging in the back of the cabinets to find ingredients that I had forgot about.

Pantry staples are a highlight for this week’s simple cucumber salad. All you need is a cucumber, coconut milk, sesame oil, a lime, an onion and sesame seeds. Seriously, you probably have all of those things in your fridge or pantry right now.
And literally, this recipe could not be simpler to come together. All you have to do is whisk your liquid ingredients together until they’re well combined. Then, throw in your remaining ingredients (cucumber, onion, sesame seeds) and toss gently to coat.
That’s it. I’d recommend chilling this salad for a while before serving. But if you just can’t wait, then be my guest and dig right in.
You could easily double or triple this recipe to take it to a potluck or barbecue (once we can start having those again…). I promise it will be a hit with all of your friends! The flavor is fresh and light and the combination of textures is just perfect.

Sesame Cucumber Salad
Ingredients
- 4 tablespoons coconut milk
- 1 teaspoon toasted sesame oil
- 1 tablespoon lime juice
- 1 large cucumber seeded and sliced
- 1 onion sliced
