This refreshing salsa is great on top of grilled chicken or fish and works as a vinaigrette for topping spinach or spring green mix salads.
Pineapple Cucumber Salsa

Ingredients
- 2 c Pineapple (finely diced)
- 1 c ucumber (for less water remove the seeds before dicing)
- Juice from 2 limes about 2 tbsp
- 1/3 c fresh chopped cilantro
- 1/3 c fresh chopped green onion
- Sea salt and pepper to taste
- Fresh chopped jalapeño or habanero seeds and stems removed (optional, for a little kick)
Instructions

Dice pineapple and cucumber and place in a mixing bowl. Due to the nature of cucumbers, the finished product will contain a fair amount of juice. If you want to limit the amount of water in the salsa, remove the seeds from the cucumber, using a spoon, before dicing.

Add diced cilantro, green onion, and lime juice. Stir to combine.

If adding hot peppers, add them now and taste test to determine whether or not you’ll add sea salt or pepper.
