We’re back with another recipe and we’re staying on the theme of the grill because we love it that much. These grilled veggie skewers make the perfect accompaniment for whatever your protein of choice may be. Could be beef (our favorite comes from White Oak Pastures), chicken, pork, fish – these skewers go with it all.
We’re featuring all of our favorite summer vegetables on these skewers this week. Bell peppers, red onion, zucchini, and mushrooms make a wonderfully seasonal combination. Slathered in olive oil and coarse sea salt, there’s no way these skewers are lacking on flavor.
Not only are skewers a fun way to eat more veggies, but they also bring a fun look to your dinner table. Using vegetables of different colors and textures is a fun way to “eat the rainbow” as they say.
You want to make sure you don’t chop your vegetables too small. Think chunky, while still bitesize. If they are too small, you’ll have a hard time keeping them on the skewer, so maybe test out a few pieces of each veggie on an actual skewer before you cut the whole thing to ensure that your size will work.
And don’t feel like you have to be stuck to these exact vegetables to make these skewers work. You can add in any that may be your favorite – I also love cherry tomatoes, yellow onion, and pineapple. And yes, if you’ve never had grilled pineapple before it is so, so good.
Even if you’re not a fan of vegetables, you should try them grilled. There’s something about that beautiful char that makes them even more delicious, in my opinion.

Grilled Veggie Skewers
Ingredients
- 1 bell pepper cut into bite sized pieces
- 1 red onion cut into bite sized pieces
- 1 zucchini cut into bite sized pieces
- 8 button mushrooms
- 2 tablespoons olive oil
- Sea salt and fresh ground pepper to taste
Instructions

Thread the veggies onto skewers, brush with olive oil and season with salt and pepper.

When ready to grill, preheat gas or charcoal grill to medium high heat. Grill until nicely charred and tender.

Serve immediately.
