Sure we love our bacon and steak around the Paleo camp, but we also love our veggies! And there is no better way to get those vegetables than with a huge salad. This Kick Ass Monster salad uses three different greens, plenty of other vegetables, and even a touch of fruit and nuts. Feel free to add some grilled chicken, steak, or other protein source as you like (perfect use for left overs!) and even a little cheese if you are one of those that stray from the “strict” Paleo parameters.
I’ve also included an awesome salad dressing. The portion sizes listed below will make plenty to bottle for future use and be sure to adjust the quantities to fit your personal tastes. Enjoy!
