Instructions
  1. Add everything to the Crock-Pot, and stir so that the seasonings are evenly distributed.
  2. Cook on low for nine hours or high for six hours.
  3. When it is done cooking, the chicken should fall apart easily. Use tongs to remove the chicken from the Crock-Pot, and shred it using two forks.
  4. Add the chicken back to the soup, and mix well.
  5. Enjoy!

    This is one of my new favorites and has become a staple in our kitchen. I have several pints of it frozen in the freezer for those days when cooking won’t fit into the schedule. Enjoy!

    The original soup was delicious but I couldn’t figure out what was not quite there, missing. I took the chicken, broth, coconut milk, tomatoes, garlic, butter, replaced the Italian seasonings with curry powder and added 2-3 precooked, mashed sweet potatoes(add curry and sweet potatoes to taste). Bingo, reminiscent of Thai or Indian cuisine. Awesome. Sweet, coconut, tangy tomatoes, meat. Perfect.
