And you already know, with the combination of almond butter, coconut oil, coconut sugar, and dark chocolate, it’s going to be insanely good.
Like I think my mouth just watered typing that out.
Want to take this recipe up another notch? Make your own almond butter! It’s way cheaper – and as long as you have a high-quality food processor, blender, or Vitamix, you should be golden.
Here’s how this is going to work. First off – don’t forget to preheat your oven. Do this first so you’re not stuck waiting around for it to preheat. I’ve only made that mistake at least 219238423987 times. 😉
Next, you’ll take all your “wet” ingredients (+ coconut sugar) and mix them well in a bowl.
In a different bowl, gently mix all your “dry” ingredients. Then carefully pour this mixture back into the bowl with the wet ingredients. Mix well to incorporate.
Spray a baking dish with your favorite non-stick spray. Trader Joe’s has an amazing coconut oil spray. I also like the avocado oil spray from Chosen Foods brand.
Put in the oven. Bake until you can insert a toothpick into the middle of the blondies and it comes out clean.

Dark Chocolate Almond Blondies
Ingredients
- 1/2 cup almond butter
- 1/4 cup melted coconut oil
- 3/4 cup coconut sugar
- 1 egg
- 1 tbsp vanilla extract
- 1 cup almond flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 cup chopped dark chocolate
Instructions

Preheat oven to 350 degrees F.

Put the almond butter, coconut oil, coconut sugar, egg, and vanilla in a large bowl. Whisk until smooth and well combined.

In a separate bowl, combine the almond flour, baking soda, salt, and chocolate. Add this to the wet ingredients and mix well.

Spray a square baking dish with cooking spray and spread the batter evenly in it. Bake for 20-25 minutes until a toothpick inserted in the center comes out clean.

Allow to cool completely and cut into 16 squares.
