Use cauliflower. Trader Joe's has frozen and refrigerated riced cauliflower that takes the work out of everything. It's kind of the best thing ever. Need a substitute for mashed potatoes? Cauliflower.  Want a sneaky way to add veggies and fiber to your morning smoothie? You guessed it. Cauliflower.  You can even make pizza crusts out of cauliflower. Thanksgiving is THIS WEEK. What?! Can you believe it? I'm having a hard time coping with that fact. It seems like it wasn't that long ago that we were setting New Years goals. Time flies when you're having fun, I guess. The holiday season is my favorite. There seems to be an energy that buzzes through places when the holidays roll around. People seem a little lighter, a little happier. And there's so much celebrating. Life is short and that simple fact makes celebrations that much more meaningful. Being able to spend time with the people you love, share food, share drinks, share laughter, time, and gifts is something that's really ...

Tamari – More Interesting Than You Might Think

November 7, 2018 By The Ultimate Nutrition Team Leave a Comment

tamari

Tamari is a type of soy sauce that is wheat-free. It is a staple condiment in most South and East Asian cuisines. Historical records reveal early forms of soy sauce originated in China in the early 7th century. Soy sauce then spread from China to surrounding regions, such as Japan and Korea. The first records of the predecessors to modern soy sauce can be traced to 12th century Japan. Tamari was initially an unidentified byproduct of the process to make miso, a type of seasoning. To prepare miso, soybeans are fermented with salt and other ingredients, such as barley or rice. The mixture is left in large cedar kegs to ferment until a ...

scallops-and-cauliflower-rice

How many times have you made scallops at home? Up until a couple of years ago, I had never made them at home. They were just something that I would occasionally order at a restaurant. I like them - I just never quite knew how to cook them at home. Thankfully, there's something called Google. And I worked up the bravery to Google a recipe with scallops. And I quickly learned it's not hard. At all. Ha. Thanks, Google. This recipe is super easy and would be great for a date night at home. With garlic and lemon, the flavor is classic and simple. Cauliflower makes a great, low-carb substitute for rice. If you want an easy recipe to try scallops ...
