If you’re a fan of apple pie – or the classic wintertime flavor of apple and cranberry – then you’re in luck. This apple cranberry crisp brings all that to the table and more. Get ready for a mouth-watering, and nutrient-dense, dessert that your whole family is going to love.
I love this recipe because it’s so satisfying to me in multiple ways. Yes, it obviously tastes delicious. It’s warm and sweetly spiced and tastes just like apple pie filling. A little soft, a little crunchy with that golden brown topping.
But not only that, this recipe is made with incredibly nutritious ingredients. For the filling, you’re going to use your favorite apple. I love Gala apples so that’s what I used, but really, any type will work here. Leave the skin on though! Not only does this make the whole recipe come together easier, you’ll get all those good nutrients that are in the skin of the apple.
You’ll also use dried cranberries. I buy these from the bulk section of my local grocery store – be sure that you get ones that are unsweetened. Then we have warming spices like ginger, cardamom, cinnamon, and nutmeg. Don’t forget the lemon for a little bit of zesty kick.
Lastly, you’re going to sweeten the whole dish lightly with a couple tablespoons of maple syrup. If possible, use the real deal – and not the imitation kind.
The crunchy topping is made up of almonds, walnuts, pecans, coconut flakes, and some more spices.
So, you’ll mix all of your filling ingredients in a large bowl. Make sure it’s mixed up well and let it sit for a bit while you’re making your topping. The flavors will mingle and marry together nicely.
For the topping, you’ll have to pull out your food processor. Put all ingredients in there and whiz it a few times. You want a crumbly texture – go gently here, you don’t want to overdo it.
Fill a square baking dish with the apple filling and top with the crumbly, crunchy topping. Now, when it comes to baking, go ahead and set your oven timer for 40 minutes. This dessert is done when the topping becomes golden brown and the filling is nice and bubbly.
Around 40 minutes, peek your head into the oven and see how it looks. It could take any where from 40-55 minutes in total depending on the hotness of your oven.
This is best served warm and fresh out of the oven. I hope you love it!
