  Bacon-wrapped anything is usually popular among paleo peeps. Am I right? Now, with that said, I eat bacon in moderation. Though this tasty pork cut is considered a meat and meats tend to be thought of as proteins, I tend to classify bacon as a fat. Most bacons (minimally processed, nitrate-free) will yield a 1:1 ratio of fat:protein. So, if you’re looking to consume 25g of protein in your meal and you make bacon your protein source, you should account for 25g of fat.   My first attempt at making a morning breakfast bowl using bacon as the bowl was a success! This recipe is low-carb, gluten-free, paleo-friendly, and so easy to make. I removed the three yolks, since I was already getting a good amount of fat from the bacon. Mmmm, bacon!
