Bacon-wrapped anything is usually popular among paleo peeps. Am I right?
Now, with that said, I eat bacon in moderation. Though this tasty pork cut is considered a meat and meats tend to be thought of as proteins, I tend to classify bacon as a fat. Most bacons (minimally processed, nitrate-free) will yield a 1:1 ratio of fat:protein. So, if you’re looking to consume 25g of protein in your meal and you make bacon your protein source, you should account for 25g of fat.
So the combination of bacon (fat) and asparagus (healthy carbohydrate) is perfect. I mean opposites attract, right? Try pairing this with grilled chicken or a medium-rare steak (I like a little moo left in my steak).
In the pictures you can see that I also baked bacon-less asparagus. I took three minutes off the cooking time for these ones.
My “serving” for this batch is as follows: 1 Bacon-Wrapped Asparagus bundle + 4 bacon-less spears

Bacon-Wrapped Asparagus
Ingredients
- 1-2 lbs Asparagus (ends trimmed)
- 5 slices bacon (or 1 piece per bundle)
- ¼ tsp Freshly ground pepper
- ½ tsp Garlic salt
- 1 tsp Sesame seeds
Instructions

Preheat oven to 400 degrees.

Trim off the bottom 1’’ of the asparagus. If your bundle of asparagus isn’t the prime of the litter, bend the top of the stalk towards the bottom half of the stalk. Wherever the asparagus snaps is the part of the stalk that you should use as the top. Discard the bottom part.

Divide the asparagus spears into bundles of 3-4 spears and wrap 1 piece of bacon around each bundle, starting 1/2 ‘’ from the bottom of the tips. It helps to secure the bacon with a toothpick.

Top with the garlic, salt, pepper, and sesame seeds.

Arrange the bundles on a baking tray that is greased/sprayed with non-stick cooking spray.

Bake for 15 minutes, then flip them over. Continue to bake for 10-15 or until the asparagus spears look slightly wilted and the bacon is fully cooked.
