Lemon Rosemary Crock-Pot Pork

Ingredients
- 4 lbs Pork tenderloin (cut into 2 inch thick chops)
- 1 Lemon
- 4 cloves garlic (smashed)
- 2 tbsp Rosemary
- 1/4 c EVOO
- Salt and pepper (to taste)
Instructions

Put three chops into the Crock-Pot, and top with two cloves of smashed garlic, one tbsp rosemary, half the EVOO, and the juice of half the lemon. Sprinkle with salt and pepper as desired.

Layer the remaining three chops on top and repeat.

Cook on low for seven hours.

what is EVOO?

This is easy, delicious and very similar to the lemon Rosemary chicken posted somewhere, which I also made in the slow cooker. If u like crispier skin on the pork loin, you can roast it also, as a whole tenderloin. Follow normal roasting directions and not so much olive oil. We eat a lot of pork tenderloin because when it goes on sale, it’s cheap! I buy a pretty large piece and have the meat dude cut it into several portions fit for two adults. Great cold, on salads or cubed, as a snack.
