Chicken is that *one* food that is constantly in my freezer. It’s a go-to food in my meal prep routine simply because it is insanely versatile and tastes delicious in a million different ways.

And then add this one to your recipe collection. It’s literally one of the easiest recipes I’ve ever made. It takes just around 10 minutes and the chicken is flavorful and -most importantly – juicy.
No one likes their chicken dry and flavorless, right?
The best way to serve this chicken is right alongside your favorite veggies. Throw some sweet potato fries or a beautifully roasted squash drizzled in coconut oil alongside it for a complete meal with protein, healthy fats, and carbs.
Juicy Italian Chicken Breast
- 4 6-ounce chicken breasts
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 1 cup chicken broth or water
- Juice of 1 lemon
- Sea salt and fresh ground pepper to taste
Season your chicken with the Italian seasoning and salt and pepper. Using the sauté setting on your Instant Pot, add the oil and the chicken breasts, and cook for about 2 minutes per side. Remove from the pot and add the broth or water to the bottom.
Set the steamer rack in the pot and add the chicken to the rack. Drizzle with the lemon juice.
Close your pot and set your timer to 5 minutes at high pressure.
Remove the chicken and allow to rest for a few minutes before serving.
