Any chocolate lover, whether paleo or not, will love this chocolate mousse. With a lovely texture and added fruit for extra sweetness, this treat makes for a perfect evening treat.
Dark Chocolate Mousse

Ingredients
- 2 Eggs
- 1/4 c Pure maple syrup
- 1 tsp Vanilla extract
- 2 tbsp Dark chocolate cocoa powder (unsweetened)
- 1/3 c Dark chocolate chips (optional)
- 3/4 c Coconut milk
- 1 pint Raspberries (or other fresh fruit)
Instructions

Add eggs, maple syrup, vanilla, cocoa powder, and optional chocolate chips to a blender. Blend well until combined.

Bring the coconut milk to a very high heat (not boiling) in a saucepan on the stove.

Once the coconut milk is hot, add it to the other ingredients in the blender in a slow and steady stream, while blending everything on low. This will melt the chocolate chips (if you opted to use them) and will “cook” the raw eggs.

Once everything is combined, pour the chocolate into small serving dishes and refrigerate for a minimum of two hours, so that it has time to set.

Serve with fresh raspberries or other fresh fruit of choice.
