Spinach Scramble with A Side of Steamed Veggies

May 5, 2014 By The Ultimate Nutrition Team Leave a Comment

Welcome to a regular meal of mine. I eat variations of this scramble every darn day. No Joke.  I don’t know about bout you, but eggs are more than just a breakfast stable in my world, as I will eat them any time of day. So why is it I eat more egg whites than whole eggs?  Eggs whites are an athlete’s best friend. Believe it or not, apart from whey protein, egg whites are one of the best absorbing proteins you can eat. A single egg white contains about 3 g of high quality protein and about 15 calories. Egg white also contains all eight of the essential amino acids, vitamins such as A, E, K, B12, riboflavin, and folic acid. All of ...

Veggie and Egg White Breakfast Wrap

April 28, 2014 By The Ultimate Nutrition Team Leave a Comment

Breakfast: my favorite meal of the day. Eggs and vegetables are a staple of my breakfasts and I am always looking for new ways to reinvent them. Between prepping my family's food for the day, taking care of the dog, and getting myself around, the mornings can be rather hectic. To make my mornings more efficient, I rely on frozen vegetables. At any given time, we have frozen diced onions and various colors of bell peppers available in Ziplock bags in our freezer. This speeds up the morning assembly line and leaves fewer dirty dishes from food prep (my favorite part!). These Veggie and Egg White Breakfast Wraps are quick and easy - just be ...

Hulk Pancakes

April 21, 2014 By The Ultimate Nutrition Team 1 Comment

HULK SMASH (these pancakes)!!! I’ve said it before, but I always try to find sneaky ways to fit vegetables into all of my meals. The banana and vanilla in this recipe not only mask the taste of the spinach, but they also add a delicious flavor. My bit of advice is to be extra delicate when flipping these pancakes. Since spinach isn’t the best binder and it releases its moisture when cooked, I tend to let the Hulk Pancakes cook a little longer than normal pancakes. Why spinach? Well Popeye knew a thing or two about this nutrient-rich leafy green. Here are a few reasons why I love spinach: A cup and a half of spinach (about the amount I use ...
