Easy Cucumber Salad
This tasty cucumber salad is packed with healthy goodness, full of crunch, and super quick to make up. You can’t go wrong with this easy and tasty recipe.
Cucumbers are made up of almost 95 percent water, which means this cucumber salad is great to keep you properly hydrated on a hot summer day.
The trick to this salad is to make the cucumber and red onion slices ultra thin. The best way to make this happen is to use a mandoline slicer. However, for those of you with great knife skills, feel free to slice away to thinly slice both cucumbers and red onion.
Please note: Be careful with the mandoline slicer and use the cutting guard that comes with it at all times. It is really easy to cut your finger with the mandoline slicer and can quickly cause serious injuries.
Once the cucumbers and onions are thinly sliced, mix them together with the olive oil, vinegar, salt and pepper to bring the dish together. Toss in some herbs to create a perfect, yet easy, fresh and crunchy cucumber salad.
As a side note, this recipe stores well in the fridge for about one day before it begins to get soggy. One option for leftovers is to add 1/2 a can of water-packed tuna to the salad for a simple and nutritious lunch! Quick, easy and delicious always wins in my book!
Easy Cucumber Salad
Ingredients
- 3 c Cucumber (thinly sliced)
- 1/2 c Red onion (thinly sliced)
- 1 tbsp olive oil
- 2 tbsp Apple cider vinegar
- Salt and pepper (to taste)
Instructions

I prefer to use a mandoline slicer to get my cukes uber thin but if you have mad knife skills, feel free to slice away and thinly slice both cucumbers and red onion.

Toss the cukes and red onion with olive oil, vinegar, and salt and pepper to taste.

Serve immediately and, if desired, garnish with fresh herbs such as dill, cilantro, or oregano.
Recipe Notes
