Take your breakfast smoothie routine to a new level with this Broccoli Breakfast Soup! Add a poached egg, some hot sauce, and your new favorite power breakfast will pack a serious punch! With egg and avocado protein, this will get your day started right!
Broccoli Breakfast Soup
- 1 bag Broccoli florets (frozen)
- 5 1/2 c Bone broth*
- 1/2 c Onion (diced)
- 1 c Celery (diced)
- 3 tbsp garlic (minced)
- 1 tsp Tumeric
- 1 tsp Ginger (fresh grated)
- 1 Avocado
- Cooking fat
- Cayenne pepper
Melt your favorite cooking fat in a large soup pot and sauté onions, garlic, and celery on medium until translucent (about 3-5 minutes).
Mix in turmeric and turn down heat.
Add in bone broth, broccoli, and ginger. Stir well and bring soup to a simmer.
Simmer on high for about 20 minutes or until broccoli is soft.
While soup is simmering, slice up avocado and place it in a blender.
Once soup is fully cooked and the broccoli is soft, add 4 cups of soup to the blender with the avocado.
Blend until creamy and add back into the soup pot.
Garnish with a sprinkle of cayenne pepper. Serve with a poached egg and your favorite hot sauce.
