Almond Joy Lara Bars
These Medjool date bars will make you feel like you’re cheating the paleo diet. They are sweet, filling and the perfect snack.
The sweet flavor comes from the combination of the dates, shredded coconut and dark chocolate chips- a winning combination in any book!
The use of a food processor helps you to easily combine all the ingredients. Once the ingredients are mixed together, you simply spread the mixture in a baking dish and place in the refrigerator for at least an hour to harden the bars.
The result is a sweet and delicious snack, breakfast bar or dessert you can quickly grab on the go any day of the week.
When storing the bars, be sure to place in an air tight container in refrigerator and separate them with parchment paper so they don’t stick together.
If you like the pretty specs of almond and coconut, process these a little less and they’ll showcase those ingredients visually as well as in taste.
Almond Joy Lara Bars
Ingredients
- 2/3 cup Medjool dates (pitted, coarsely chopped)
- 1/4 cup Almonds (unsalted)
- 2 tbsp Dark chocolate chips
- 2 tbsp Unsweetened shredded coconut
- 1 tsp Vanilla extract
Instructions

Using a food processor or high powdered blender, add the date, almonds, chocolate chips and shredded coconut.

Process until beginning to break down.

Add the vanilla. Process another 2-3 minutes.

Line a square baking dish with parchment paper, on the bottom and all 4 sides.

Transfer the date mixture prepared baking dish.

Using your hands or a rubber spatula, spread the mixture until in an even, flat layer.

Cover with another piece of parchment paper.

Refrigerate at least 1 hour.

Cut into square.

Store in an airtight container and between parchment paper so they don’t stick.
