Using a food processor or high powdered blender, add the date, almonds, chocolate chips and shredded coconut.

Process until beginning to break down.

Add the vanilla. Process another 2-3 minutes.

Line a square baking dish with parchment paper, on the bottom and all 4 sides.

Transfer the date mixture prepared baking dish.

Using your hands or a rubber spatula, spread the mixture until in an even, flat layer.

Cover with another piece of parchment paper.

Refrigerate at least 1 hour.

Cut into square.

Store in an airtight container and between parchment paper so they don’t stick.
