What’s better than a waffle? You might say “nothing!”, but I think this recipe might be. These sweet potato waffle hashed browns are everything that’s great about breakfast. It’s yummy, filling, sweet AND savory. Top it with an egg and it’s got a healthy punch of protein.
Sunday mornings are my favorite time of the week. At my house (or, should I say tiny apartment…), it’s the only day of the week that I don’t have to be anywhere. That means, I can wake up without an alarm. (Worth noting that I’m still up by 7:30 AM, but hey, it’s fine…) Mornings on Sunday are slow. There’s a lot of in-bed lounging. There’s no rush.
That also means that breakfast can be slow. For me, it always starts with coffee. First things first, let’s be honest. Once I’ve had my first cup of coffee (probably 1.5 more to go :)), breakfast starts to come together.
These sweet potato waffle hashed browns are one of my favorite things to make on an easy Sunday morning. Chances are you have all the ingredients you need in your pantry or fridge right now.
First, and most obviously, you’ll need a sweet potato. You can grate that potato using a handheld grater or a food processor with a grating attachment. Once you’ve done that, you’ll mix all of the ingredients in a large bowl. Be sure to incorporate them thoroughly.
Next, you’ll gently spoon the mixture into a waffle maker. BE SURE TO USE COOKING SPRAY. You don’t want a stuck waffle. We also suggest using a regular waffle iron and not a Belgium waffle maker. Press the sweet potato waffle mixture into the shape of your desired waffle.
You’ll cook your waffle until the potatoes are cooked through. Keep a close eye on it. The time this takes definitely differs depending on your waffle maker. Once it’s done, you’ll carefully remove it and place it on a plate to cool.
I recommend serving this alongside your other favorite breakfast foods. A sunny-side up egg on top is great. Bacon or sausage would be a fabulous option as well. Don’t forget the avocado with healthy fats and fiber.

Ingredients
- 1 sweet potato grated
- 1 egg beaten
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon sea salt
Instructions

Add all of the ingredients to a large bowl and mix well. Preheat your waffle iron according to your manufacturer’s instructions.

Spray the waffle iron with cooking spray.

Spoon the sweet potato mixture into the waffle iron and cook for several minutes, until potatoes are well browned.

Serve with your favorite breakfast accompaniments: fried eggs, bacon, or Paleo sausage.
