Have you hit a breakfast rut? Do you eat the same thing over and over again because you’ve just run out of ideas. Or changing up your routine requires too much thought or effort? Are you sick and tired of eggs and bacon? If any of this resonates with you, then this almond butter banana sweet potato toast might just be the answer to your problems.
We already know that sweet potato is a bomb replacement for traditional French fries. Sweet potato noodles (using a spiralizer) are also delicious. (Don’t believe me? Try this recipe from Love and Lemons.) But those orange starchy tubers also make a great replacement for a non-paleo morning staple – toast.
Here are some tips for ensuring that your sweet potato toast turns out perfectly each time you make it.
First off, make sure you choose big sweet potatoes from the store. You’ll want cylindrical-shaped ones, so they make ideal slices.
If you have a mandolin slicer, that is definitely the way to go to get the most uniform-shaped slices. If not, don’t fear! Just make sure you have your sharpest knife and slice the potato length-wise.
Now, you can use a toaster oven or a toaster to toast these babies up. The trick is to get them fork-tender but to not get them too soft. Too soft and it’s going to be a mushy mess and no one wants that.
This recipe uses bananas + almond butter because that combination is CLASSIC. But you could go crazy with toppings – whatever you think sounds great. The only other piece of advice I’d have for you is to let the sweet potato toast slices cool off before you smother it in almond butter. You don’t want the almond butter and bananas to melt and slide off.
The instructions for this recipe says to mash the banana in a bowl with the almond butter and put that glorious mixture on top of the sweet potato. But to be honest, that does not photograph very well. So for the sake of pretty food, we photographed this recipe with the bananas sliced on top of the almond butter.
Either way you choose to do it, it’s going to taste amazing.
Almond Butter Banana Sweet Potato Toast
Ingredients
- 1 sweet potato
- 1 ripened banana
- 2 tablespoons creamy almond butter
- Coarse sea salt
Instructions

Slice the sweet potato into 1/4 inch slices. Toast, either in a toaster oven or toaster until lightly browned.

In a small bowl, mash the banana with the almond butter. Spread on the toast and serve.
