If you’re tired of eggs and looking for a hot breakfast, this will become you’re go to. It’s delicious and simple to prepare ahead of time and reheat before you head out the door.
Pork Breakfast Skillet
- 1 lb Ground pork
- 1/2 Bell Pepper (diced)
- 1/2 Onion (diced)
- 1 Zucchini (diced)
- 1 tbsp Dijon mustard
- 2 Fresh sage leaves (minced)
- Sea Salt and Black Pepper (to taste)
In a large skillet, add a dollop of coconut oil over medium high heat.
Add the onion, zucchini, and bell pepper. Saute for 3-4 minutes, or until they begin to get tender.
Add the pork. Brown over medium high heat until cooked through.
Add the sage, salt pepper, and Dijon mustard. Warm through
Store in an airtight container or serve immediately.
