Paleo treats can be just as tasty as conventional sugar-filled treats, but, let’s be honest, sometimes making them is a bit of an effort. Some days you find yourself wishing that you could just pop down to the shop and pick up some heavily processed and packaged sweets.
Don’t do that! We’ve got the answer! Today’s recipe is for some delicious paleo cookies, which – wait for it – you don’t even have to cook! Simply blend the ingredients together, put them in the freezer, and wait for them to harden up. Problem solved!
Paleo Freezer Cookies

Ingredients
- 2 c Unsweetened coconut flakes
- 1 c Coconut oil
- 1.5 ounces Freeze-dried fruit (I used apple)
- 3-4 tbsp Honey
- 1/2 tsp Vanilla extract
- Pinch of sea salt
Instructions

Line a baking sheet with parchment paper and set aside.

Add all ingredients to a high-powdered blender or food processor and blend until the mixture reaches a nice dough-like consistency. If you don’t have a high-powered blender or food processor (like me), you’ll want to stop the blades occasionally to hand-mix the ingredients in the blender and possibly add a couple of teaspoons of water (sparingly!) during the mixing process.

Once the dough has reached the desired consistency, spoon the dough out by the tablespoon onto the parchment-lined baking sheet.

Freeze for 45 minutes or until hard.

Once the cookies are hard enough to handle, they can be transferred to freezer bags or to parchment-lined Tupperware for longer-term storage. But, trust me, these little nuggets of goodness won’t stick around long!
