To make this recipe really easy, use a rotisserie chicken. That way you don’t even have to worry about cooking anything. You just need some basic spices, a couple of oranges, coconut aminos and slivered almonds – for that crunch factor.
After you mix up the chicken salad, I would recommend letting it chill in the fridge for at least 15 minutes. Let all those flavors get familiar with each other. I promise it helps it taste just a little bit better.
As far as serving this goes, I’d recommend in big lettuce cups. You could also do it on top of a bed of fresh spinach or just straight out of a bowl. Honestly it doesn’t matter how you do it – it’s going to be delicious!

Ingredients
- 1/4 cup plain Greek yogurt
- Juice and zest of 1 orange
- 1 teaspoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic minced
- 1 teaspoon coconut aminos
- 1 teaspoon poppy seeds
- 2 cups cooked and shredded chicken breast
- 4 green onions sliced
