Poppy seeds not only add a satisfying crunch to this salad, but they also have some health benefits as well. These little seeds contain some essential micronutrients including calcium, iron, folate, and zinc.

Poppy Seed Summer Squash and Carrot Salad
- 2 summer squash grated
- 1 Apple peeled and grated
- 2 large carrots grated
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tablespoon raw honey
- 1 teaspoon poppy seeds
- 1/4 teaspoon sea salt
Put the squash, apples, and carrots in a large bowl.
In a separate bowl, whisk the olive oil, lemon juice, honey, poppy seeds, and salt until well combined.
Toss with the salad before serving.
