You’ve heard of sweet potato fries, but have you ever had carrot fries?
If not, you’re about to be pleasantly surprised!
Now, the sweet potato make a great replacement for white potatoes when it comes to fries. But the carrot is another way to spice it up even more.
Carrots are nutrient-packed which is another reason to find ways to get them into your diet. These veggies are loaded down with beto-carotene, vitamin K, and vitamin C.
If you’re a fan of big flavor, these fries are right up your alley because we’ve put a little curry spin on them. And they couldn’t be easier to make. All you need is an oven and a baking sheet. And the ingredients of course.
First, make sure to pre-heat your oven to 425 degrees Fahrenheit. (I always forget to do this…so don’t be like me.) Next you’re going to give your carrots a rough peel and chop them into a fry shape. You don’t have to be perfect here, but you should try to keep the size consistent. I aim for about 3 inches long and .25 inch thick.
Once you’ve cut your fries, toss them in coconut oil and the spices. We’re using curry powder and sea salt here. Then bake for 20-25 minutes or until done. Be sure to keep an eye on them while they’re baking in case your oven is a little hotter than mine.
Once they’re done, pull them out of the oven to cool. This is the point you can top those bad boys with some roughly-chopped cilantro. Take that flavor up another notch. Once they’re cool enough to eat, serve them up next to a paleo burger or grilled chicken dish.
Curried Carrot Fries
- 4 large carrots
- 1 teaspoon curry powder
- 1/2 teaspoon sea salt
- 1 tablespoon coconut oil melted
- Chopped cilantro
Preheat oven to 425 degrees Line a baking sheet with parchment paper.
Peel and cut the carrots into sticks about 3 inches long and 1/4 inch thick. Toss with the curry powder, salt, and oil.
Lay on the baking sheet in an even layer. Bake for 20-25 minutes, until carrots are crisp and lightly browned. Remove and sprinkle with the cilantro.
