This chicken salad makes for a great lunch. It’s light but it’ll provide you with plenty of protein and healthy fats. This is a great way to sneak some chicken into your lunch without having to cook up an entire meal. Yum!
Chicken Salad with Capers & Avocado
- 1 Chicken breast (shredded)
- 1 Avocado (diced)
- 1 tbsp Capers
- 1/2 Stalk celery (diced)
- 2 tbsp Paleo mayo
- 1/4 c Onion (diced)
- 1/4 tsp Onion powder
- Sea salt and freshly cracked pepper (to taste)
- leaves Freshor romaine leaves
Mix all ingredients in a small bowl.
Serve on top of fresh greens or wrapped in romaine leaves.
