Mini Pumpkin Muffins 1/2 c Pumpkin puree1/2 c Honey4 Eggs ((large))1/4 tsp Baking soda1/4 tsp Salt1 1/2 tsp Pumpkin pie spice1/2 tsp Cinnamon1/4 c plus 2 tbsp of coconut flour Preheat your oven to 350 degrees F.Combine all the dry ingredients in a bowl, and then blend in all the wet ingredients.Let the batter sit for about 5 minutes or so, to allow the coconut flour to absorb the moisture.Fill mini muffin tins/papers with small amount of batter, and bake for about 25 minutes, or until a toothpick comes out clean.   ...

Chicken with Chipotle Gravy 3 Garlic cloves ((minced))1 Onion ((small, diced))1 in Chipotles adobo sauce ((7.5 oz can))3 tbsp HoneyAdditional Stevia ((to taste))1 tbsp Coconut oil ((for frying)) Add garlic, onions, honey, Stevia, and chipotles along with their sauce to blender.Blend until the ingredients are fully combined and have become a smooth mixture.Warm the cooking oil in the pan.Add chicken breasts and sauce to the pan.Simmer on medium-low for about 7 minutes per side or until no longer pink in the middle.Serve with steamed cauliflower and spinach.   ...

Italian Omelette 4 Eggs ((whisked))1 Yellow pepper ((small))1 Orange pepper ((small))1/2 c Cherry tomatoes ((sliced))1 tsp Italian seasoning1 c SpinachSalt and pepper ((to taste))Red pepper ((Crushed,to taste)) Allow a tbsp of coconut oil to warm in a small saucepan.Once the pan is warm enough, pour in half of the egg mixture, and cover.Sprinkle the egg mixture with seasonings, and allow it to cook until the bottom is firm. Spicy Chorizo Soup 1 Onion ((medium, diced))2 Heads of garlic ((minced (about 1/2 c)))12 ounces of “clean” chorizo sausage/other spicy sausage3 Stalks celery ((diced))1 White potato ((medium, cubed))32 oz Chicken broth1/2 tbsp Red pepper flakes ((crushed))1/2 c Zucchini ((cubed))1/2 c Yellow squash ((cubed))Coconut oil Add a tbsp or two of coconut oil to sauté onions and garlic in a large dutch oven or other sturdy soup pot.Sauté onions and garlic on medium-high until the onions are translucent.Remove chorizo from its casing, and add it to the onions and garlic to brown.Chop celery and potato while chorizo is browning.Once ...

Paleo Meatballs 1 lb Ground beef1 Egg1/2 c Bell pepper ((chopped))1/2 c Zucchini ((shredded))1/2 c Onion ((chopped))1/4 c Coconut flour1 tsp Onion powder1 tsp Garlic powderSalt and pepper ((to taste))Muffin cups Preheat oven to 350 degrees.Combine all ingredients in a big bowl. Mix well.Using hands, make fist-sized balls, and place in muffin cups (makes 12-15 medium sized balls). Silver Dollar Hot Cakes 2 Eggs3 tbsp Full fat coconut milk1/2 tbsp Ripe banana ((Mashed, or 3 unsweetened applesauce))1/2 tsp Apple cider vinegar1/2 tsp Vanilla extract1.5 tbsp Coconut flour1/4 tsp Baking sodaPinch of saltPowdered Stevia to taste ((to taste))Coconut oil ((for frying)) Put a dab of coconut oil into a pan for frying, and heat it at just under medium heat. Coconut Oil Chocolates 1/2 c Coconut oil1/4 c Unsweetened cocoa powderStevia Pour 1/2 c coconut oil into a small mixing bowl.Using a sieve, add cocoa powder to the coconut oil, and whisk to combine well. The sieve is a very useful tool in this step as it makes sure that the powder blends evenly with the oil.Once the coca powder is fully blended into the coconut oil, add a few dashes/drops of liquid or powdered stevia until you reach the desired sweetness. I’ve always loved lobster, crab, and scallops in any form. But I was a little so-so about eating fish of any kind. It just seemed boring, tasteless, and, well, fishy.
