One of the most difficult changes to make when transitioning to the paleo way of life is giving up cereal and other common breakfast meals. But now you don’t have to! This granola is perfect for breakfast, as well as for other meal such as apple crisps (recipe for this coming soon!).

Instructions
  1. Preheat oven to 350 degrees and grease baking sheet with coconut oil. Now is not the time to be stingy. Make it count so that you don’t have to scrub that bad boy later!
  2. In a bowl, whisk coconut oil, pumpkin puree, cinnamon, nutmeg, cloves, allspice, ginger, vanilla, and salt. Mix well so that the pumpkin coats the nuts and seeds evenly.
  3. Pour granola mixture onto the baking sheet, and spread out evenly using a spatula.
  4. Bake for about 15-20 minutes, remove the baking sheet, and flip the granola over. Repack evenly using a spatula.
  5. Bake for another 15-20 minutes or until crisp.
  6. Serve with coconut milk, almond milk, or other paleo approved “milk”, and enjoy! This is also good as a topping on salads or with Paleo Apple Crisp (recipe coming soon!)

      Glo,

      I’d think that this would keep for quite some time given the ingredients. If you looking to get the longest amount of time out of it, I recommend an airtight container and possibly storing left overs in a fridge or freezer. I think the pumpkin puree would be the first thing to go bad out of all the ingredients…. How long are you looking to store it for?

    I am doing a 21 day clean cleanse right now. I have just finished my 1st week. It was rough, but I feel that in the long run I will feel so much better. When I finish this cleanse I am go to change my eating lifestyle to the Paleo way of eating. I am 55 years young. I usually eat pretty good, but have made this decision to change my lifestyle because I was diagnosised with Fibromyalgia at the age of 28 & as I grow older it has started to become a problem in my daily living. I have just decided to live my life & not sit on the couch & watch it go by. This website is so helpful to me. I look forward to learning & growing healthier.

    I liked this recipe. I felt like my final product came out a little bitter versus sweet but once I mixed it with milk it was perfect. Is this also a suitable recipe to use just by itself? I’d like to be able to take something like this hiking when we go again.
