Warm it until it becomes fragrant After that, add the bone broth to the soup pot and turn up the heat to bring the soup to a slight simmer. Then, add cabbage, onions, carrots, and bay leaf. Simmer it then for 20 minutes. Once the onions, cabbage, and carrots are fully cooked but not mushy, add in the spinach. Simmer 5 minutes longer. Lastly, taste test the soup and add some salt and pepper. Remember, the bone broth has not been salted, so you might want to be generous with the salt. Vegetable Soup with Cabbage and Onion "Noodles"
- 4 c Bone broth*
- 1 c White onion (very thinly sliced, use a mandolin slicer)
- 1 c Cabbage (very thinly sliced)
- 1/2 c Carrots (chopped)
- 1/2 c Spinach (chopped)
- 1 tbsp garlic (minced)
- 1/2 tbsp Coconut oil
- Salt and pepper (to taste)
- 1 Bay leaf
Add coconut oil and minced garlic to soup pot. Warm until fragrant.
