TACO TUESDAY – but make it breakfast.
This taco scramble does just that. It turns your favorite Mexican food in to a breakfast dish (or lunch or dinner…no judgement) sans tortilla and chips.
With eggs and ground beef, this scramble is loaded down with protein. Protein is great for keeping you full and satiated as well as helping you build muscle.
It’s important to make sure you’re eating enough protein every day, and this recipe will help you hit your goal.
The great thing about tacos is that you can top them with all your favorite things. This scramble is no different. Personally, I like diced tomatoes, cilantro, guacamole, and a couple slices of jalapeno. Oh, and don’t forget the lettuce.
But you do you and get crazy with it. Anything is fair game here.
And like I said, just because this is a scramble, doesn’t mean you have to eat it for breakfast. I eat breakfast foods for dinner and dinner foods for breakfast all the time.

Taco Scramble
Ingredients
- 1/2 pound ground beef
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon sea salt
- 4 eggs beaten
- Toppings: Shredded lettuce salsa, diced avocado
Instructions

Cook the ground beef with the seasonings in a medium skillet until no longer pink. Add the eggs and scramble.

To serve, divide between two plates and add your favorite Paleo toppings.
