Potatoes are listed as one of the world’s healthiest food and can be served in so many ways. Whether mashed, baked, fried, or just simply broiled, potatoes will never be off season. That is why we are introducing a potato dish that will literally spice up you potato foodventure experience.
To make this delectable dish, pre heat your oven to 400 degrees and while heating, get 1 tbsp. of coconut oil to grease the baking sheet. Spread diced sweet potatoes evenly across the greased baking sheet and sprinkle liberally with paprika, sea salt, and pepper. Toss the sweet potatoes, so that they are evenly coated with spices. And if you wish, you can drizzle sweet potatoes with remaining tablespoon of coconut oil and add more spices if desired.
Cook the potatoes for 15 minutes and while the sweet potatoes are cooking, mix up a batch of the spicy cilantro aioli. Crack the egg into a large mouthed mason jar and Add lime juice, salt and pepper to taste, cilantro, chopped jalapeño, and 1/2 c light tasting olive oil. Using a submersion blender, blend all ingredients until creamy then set aside.
Once potatoes are complete, serve as an appetizer on a nice plate with toothpicks and a side of the spicy cilantro aioli.

Ingredients
- 3 inch Sweet potatoes (cut into 1cubes)
- 1 tsp Paprika
- Salt and pepper (to taste)
- 2 tbsp Coconut oil
- 1 Egg
- 1/2 c Wxtra light virgin olive oil
- 1/2 c Cilantro (diced)
- Juice from 1 lime (about 1 tbsp)
- 1/2 Fresh jalapeño (diced, seeds and veins removed)
Instructions
