Smoked Salmon Cucumber Bites with Lemon Coconut Cream
- 2 Cucumbers sliced
- 1/2 cup Coconut cream (thickened cream on top of a can of coconut)
- 1 Lemon juiced
- 4 ounces smoked salmon
- 2 tablespoons Capers
- 1 tablespoon minced chives
Lay the cucumbers out on a platter or baking sheet in a single layer. Whisk the coconut cream with the lemon juice and top each cucumber slice with a small dollop.
Top with smoked salmon, capers, and chives before serving.
