Ingredients
- 4 tablespoons sesame oil
- 6 green onions diced
- 1 clove garlic minced
- 1 pound pork chops cut into tiny pieces
- 1/2 cup shredded carrots
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 eggs beaten
- 4 cups rice cauliflower
- 1/2 cup cashews
Instructions

Heat the oil in a heavy skillet over medium heat. Add the green onions and garlic and cook for 1 minute. Add the diced pork and cook until browned. Add the carrots, soy sauce, vinegar, and eggs and stir until eggs are cooked and scrambled.

Add the cauliflower and cashews and stir until well combined and heated through. Serve immediately.
