This latte was the perfect compliment to a cozy blanket and a book until the caffeine kicked in and now I was suddenly ready to seize the day!
Paleo Vanilla Latte

Ingredients
- 1 Pot of freshly brewed coffee
- 1/2 Lite coconut milk (can)
- 1 tsp Vanilla extract
- 2 Stevia (packets)
- Cinnamon
Instructions

Using either a hand blender or a KitchenAid mixer, whip coconut milk, vanilla and one packet of Stevia for two minutes.

Pour coffee and Stevia into a mug. Be sure to leave one inch of space below the rim.

Slowly pour whipped coconut milk into coffee.

Create adorable latte art and top with cinnamon.

Recipe Notes
To cut back on the fat, I used canned lite coconut milk. Once refrigerated, the cream rises to the top, so I used the top half of the can contents for the creamed portion of the drink. For a richer and thicker froth, use canned full fat coconut milk or coconut creme (I buy mine at our local Sprouts).
