Frittatas make for delicious, easy breakfasts, and they are also suitable for lunch or even dinner. They are also a popular option when hosting family or friends for brunch. Frittatas are usually packed with protein and vegetables, giving you the energy and nutrients you need. You could even simply use the ingredients that you find the refrigerator; ham and broccoli are just a starting point.
Ham and Broccoli Frittata
- 8 Eggs
- 1 tbsp Coconut oil
- 1/2 Red onion (small, diced)
- 1 clove garlic (minced)
- 1/2 Head of broccoli (cut into small florets
- 1 Sweet potato (small, peeled and finely diced)
- 1 cup Cooked ham (diced)
- 1/3 cup Almond milk
- 1 tbsp Fresh parsley (chopped)
- Salt and pepper (to taste)
Preheat the oven to 375 degrees F.
In a 10-inch oven-safe skillet or baking dish, melt the coconut oil over medium heat.
Add the onion and sauté for 4-5 minutes until soft.
Add in the garlic and sauté for one minute more.
Add the broccoli into the skillet and cook for 5 minutes.
Add the sweet potato, stirring to combine, and cook for 3-4 minutes.
Stir in the ham.
Meanwhile, whisk the eggs in a medium bowl.
Add the almond milk and season with salt and pepper.
Pour the eggs over the skillet mixture, stirring once.
Cook on the stovetop for 2-3 minutes more to set the bottom of the frittata.
Transfer to the oven and bake for 15-20 minutes, until the eggs are set and cooked through.
